Creamy Chicken Taquitos!

My friend Paige has joined in on my Pinterest Food Challenge, and last night I decided to cook her first challenge dinner- taquitos! Her recipe is different then mine, and she references yet another recipe in her post so be sure to check it out! Like I said in my last challenge post, I hate following recipes so this was a good flexible one.

We all pin so many ideas and recipes, but let’s take some action people! At least once a month, cook or bake something that you pinned and link it in the comments!

My taquito recipe:

  • 4 chicken breasts, boiled then shredded (I find boiled chicken is the easiest to shred)
  • 3 oz softened cream cheese
  • 1 cup mexican cheese
  • 1/4 cup green salsa
  • 2 minced garlic cloves
  • chili powder (I didn’t measure, I just shook it like a polaroid picture)
  • soft taco shells
  • melted butter and sea salt (to sprinkle on top)
PS- I recently learned that shredding chicken means taking two forks and tearing them apart.

Combine the chicken, cream cheese, mexican cheese, salsa, garlic, and chili powder and mix it up well.

Line your baking pan with either foil or parchment paper. Next, spread 2-3 spoonfuls on the taco shells and roll up them up tightly. Place them on the baking pan fold side down.

Brush the melted butter on top then sprinkle a little salt on top. It makes for an amazing crunch. 🙂 Then bake for 20 minutes at 425*.

Serve with sour cream and a margarita!
