The Amazing Chicken

So I know I’ve already fulfilled my challenge requirement for the month with some delicious soft brown sugar cookies, but I thought I’d try my hand at an actual meal as well. Make no mistake, this  by no means implies I made something healthy- only that I made something that was not a dessert. Let’s not get too crazy here.

We all pin so many ideas and recipes, but let’s take some action people! At least once a month, cook or bake something that you pinned and link it in the comments!

The original recipe for the chicken I made can be found here, but I only loosely followed it.

Holy delicious chicken, batman.

I took 3 chicken breasts and cut them in half long ways, then covered them in the following mixture

  • 1 cup mayonnaise
  • 1.2 cup grated parmesan cheese
  • 1.5 teaspoon Adobo seasoning
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • A little sloosh of lemon juice
  • 4-5 basil leaves (shredded)
  • 6-7 parsley leaves (shredded)

Cook for 45 minutes at 375*.

I was super concerned when it was cooking because all that oil and grease seeped out, then I realized I used an entire cup of mayo to make it soooo that’s about right.

The chicken didn’t even need a knife to be cut up, it melts in your mouth and all is good in the world.

This recipe took about 10 minutes of prep work and cleaned up really easily, I highly recommend it. I also highly recommend you eat it with a salad so you don’t feel as awful about yourself when you’re done. 🙂
